Cranberry Cake

A limited-edition cranberry treat to welcome the holiday season!

This is a winter variation on the classic pineapple cake. Cranberry cake is not new to the world and is often seen in Taiwanese bakeries, filled with chunks of dried cranberries mixed in with pineapple jam. And dare we say it, there is room for improvement.

A proper pineapple-cake-like pastry should keep its hallmark texture: a tender, crumbly pastry wrapped around a silky, plush filling. For our cranberry cake, the filling is soft and pillowy (no chunks!) and the pastry fragrant and buttery, think of the satisfying bite of a fig newton but with a burst of bright, tangy cranberry at the center.

To bring the holiday spirit alive, we incorporated a generous dose of vanilla bean to accompany this often-overlooked fruit on the Thanksgiving table. So, gather family and friends, put out these pastries and pair it with a pot of our black tea (we are partial to Batch #8) for a perfect afternoon treat. Or bring them to your holiday dinner get-togethers—we think it'll be a crowd-pleasing dessert!

• Flour, butter, sugar, cranberry, winter melon, pineapple, milk powder, eggs, maltose, vanilla.

Produced in a facility that processes wheat, milk, egg, soy, tree nuts, & peanuts.

Storage

Cranberry cakes will remain fresh at room temperature for 15 days from the packing date, or they can be stored up to 4 weeks refrigerated or 2 months in the freezer. We are not responsible for delays in shipping once the package has been transferred to the carrier.
