Papas arrugadas, or wrinkly potatoes, is a way of cooking potatoes. It is a dish characteristic of the Canary Island. The method of cooking consists of boiling the potatoes, skin on, with a lot of salt. Once the potato is cooked and the water is drained, a small crust of salt will appear over the potato skin.
