Silver Needle and White Peony are famous white tea varieties coming almost exclusively from Fujian in China. Taiwan is known for its oolongs, but this bountiful island is full of surprises.
In the small town of Hualien, we found a four-generation tea maker producing white tea in small batches by hand. The family traces its origin back to Fujian and started making White Peony mainly for themselves, tending to their own nostalgic flavor memory in delicate florals and alluring sweetness. Carefully hand-picked and air dried, only two leaves and a bud can be harvested to create this vibrant and delicious brew.
Plenty of young tea buds means a higher level of caffeine and an extra dose of anti-oxidants. We like this tea because it cools the body and lifts the mind. Brew it in a porcelain gaiwan when preparing it hot, or cold brew it in glass pitcher for a beautiful afternoon treat. The infusion is present yet silky, slipping through the palate and leaving traces of sweet nectar and soft florals. We are drawn to its stately elegance, like watching Audrey Hepburn play Princess Ann in Roman Holiday, full of charm and beauty.
