Green tea · no oxidation
Taiwan is known for its oolongs but one shouldn't overlook its green tea. With a history that dates back to the mid-1900s, Canyon Green is also known as Sanxia Biluochun (三峽碧螺春).
Made from Qingxin Ganzai cultivar (青心柑仔), this cultivar is uniquely known in the Sanxia region of northern Taiwan for producing high-quality green tea with a subtle aroma of citrus peel.
Similar to its Chinese counterpart, Canyon Green's aroma profile is vibrant and bright. The dry leaf is small and delicate as good quality green tea only harvests two leaves and a bud. The eggshell yellow infusion is soft on the grass notes but filled with the aroma of sweet peas and nutty mung bean. Versatile in its preparation, it's refreshing and juicy cold-brewed for a hot summer day yet sweet and charming when brewed hot.
