Ginger, lemongrass, citrus oil

Maqaw, a peppercorn-looking seed from an evergreen shrub (Litsea cubeba), is indigenous to Taiwan and a traditional spice for the aboriginal Atayal tribe. It is commonly referred to as Taiwan mountain pepper (山胡椒).

The Taiwanese tribal citizens collect Maqaw seeds from the shrub and sundry them to intensify the flavor. They use it as caffeine-free tea and also as a spice for both meat and seafood preparations.

We get an intensely perfumed lemongrass nose which fills the air, and bright citrus palate which is gingery without the bite. A few peppercorns go a long way, use gently as the aroma is invigorating and potent.
