Pineapple Linzer Cookie

The Pineapple Linzer Cookie is an interpretation of the traditional Taiwanese pineapple cake. The cookie is made with two discs of hazelnut shortbread, filled with pineapple jam, and finished with lime zest and sea salt. It was the very first sweet snack developed to complement the tea service at Té Company.

Since its inception, this Linzer has been a bestselling treat and have been a favorite amongst New Yorkers and pastry chefs around the world. In 2025, the Pineapple Linzer was deemed one of the 25 Essential Pastries in NYC.

Ingredients

• Flour, butter, sugar, pineapple, eggs, hazelnuts, salt, baking powder, salt, vanilla, peppers, yuzu, lime

Produced in a facility that processes wheat, milk, egg, soy, tree nuts, & peanuts.

Storage

Pineapple Linzers will remain fresh at room temperature for 2 weeks from the packing date, or they can be stored up to three weeks refrigerated or two months in the freezer. We are not responsible for delays in shipping once the package has been transferred to the carrier.
