Dried Persimmons
Dried Persimmons
If you’ve spent any time in our tearoom in the fall, you may have noticed that persimmons are a particular favorite of ours. They made a regular appearance as table decorations and display accents. We also served them as a fruit snack to accompany our oolongs.
It's been a tradition in the last few years to hang rows of the Hachiya varieties on the ceiling of our tearoom to turn them into dried fruit. This year we doubled our production with an improved drying method for juicier and softer texture.
Persimmons are delicious as they are auspicious. They are round, plump, sweet, and bright in color. The Chinese name for persimmons (Shi 柿) resembles the word (Shi 事) in pronunciation, which means matters, affairs, business. A collection of sweet, plump, and bright persimmons signifies joyous and successful affairs in the new year.
Slice up the dried persimmons and enjoy them plain with your pot of tea, add them to your cheese plate, or put them in your morning yogurt. There is no wrong way to serve these jammy treats.
Note: The white frost on the persimmon results from the natural fructose that crystallizes on the surface of the fruit. It tends to get more intense as time goes on and is safe to consume.
