The higher grade of Frozen Summit comes from the same family as its counterpart and this batch is some of their best work. At the tearoom, this tea goes by the name Frozen Summit Fancy as a homage to the old way of rating teas.
The head of the family, Mr. Lin, insists their tea be brewed in a clay pot, and preferably a Yixing, to deepen the aroma.
Here, each note is elevated. Where we taste the nuttiness of toasted grains and the woodsiness of the roast in Frozen Summit, in the higher grade we discern hazelnuts, camphor, and cedarwood, with a long, chewy finish.
